The star anise in this baked apple can be eaten, chewed like a nut, or discarded. According to Wikipedia, star anise provides an essential ingredient for Tamiflu, so you might want to consider eating it. It must be good for us!
Chewing the anise before eating the apple, coats your taste buds with the anise flavor, leaving a taste that lingers while eating the rest of the apple. It’s a healthy dessert if you forgo the cream and settle for a drop of milk or a spoonful of yoghurt.
For each person:
- Take 1 medium to large apple, preferably hard and a bit tart.
- Remove the core with a sharp knife, leaving the apple intact!
- Place upright in a small baking dish.
- Stuff a large Brazil nut in the bottom of the carved-out core.
Mix a handful of cashews and raisins together with about 1T Demerara sugar and stuff into the carved-out core.
- Press 1 whole star anise into the top of that mixture.
- Drizzle with honey.
- Bake in a hot oven (180-200C) for about 30 minutes. Actual cooking time depends on the size of the apple and how hot the oven is when you put the apple in.
Serve with your favorite topping. Custard, crème fraîche, cream, whipped cream, ice cream, yoghurt, or just plain milk! Or have it NATURALLY NAKED!
